pesto

this post is dedicated to one of my best friends Ruth. she loves to cook and wants to be a chef someday, so i thought i'd post one of my favorite recipes in honor of her. ;-)

three cups of fresh basil leaves
two large cloves of fresh garlic
half a cup of pinecuts, walnuts, almonds or a combination
threefourths cup of fresh-chopped parsley
half a cup of olive oil
one fourth cup melted butter
salt to taste

combine everything in a blender on low, then medium speed. throughly work everything into a smooth paste. toss or spoon onto hot drained pasta.

this recipe is something my family makes a lot of at the end of the summer. my mom grows basil in our garden every year, and my whole family loves it! :-)

quote of the post:
"strength is the capacity to break a chocolate bar into four pieces with your bare hands -- and then eat just one of the pieces." - unknown
